Sauder's Hard-Cooked Eggs Recipes

10 hard-boiled eggs
1/4 cup spicy brown mustard
3 tablespoons mayonnaise
1 teaspoon white-wine vinegar
2 to 3 tablespoons water
Fresh parsley leaves and paprika for garnish
Halve the eggs lengthwise, force the yolks through a fine sieve into a bowl, and stir in the mustard, the mayonnaise and the vinegar. Stir in enough of the water to reach the desired consistency, add salt and pepper to taste, and mound the filling in the egg whites.
Sprinkle with paprika and top with a sprig of parsley. Serve now or cover and refrigerate until ready to serve.

1/3 cup sour cream or mayonnaise
1/2 teaspoon salt
1/4 teaspoon curry powder
6 hard-cooked eggs, chopped
1 cup frozen peas, thawed
1/4 cup chopped green onions with tops
1/4 cup sliced almonds
(lettuce leaves and/or tomato slices, optional)
In medium bowl, stir together first 3 ingredients until evenly coated with dressing. Cover and chill to blend flavors. Serve on lettuce leaves and garnish with tomato slices, if desired.

1 8-inch flour tortilla
1 Sauder's Hard-Cooked Egg, sliced or chopped
1 tablespoon shredded low-fat cheese
1 tablespoon salsa
Place tortilla on 1 sheet of paper towel.
Top with egg, cheese, and salsa.*
Fold sides in 1-1/2 inch.
Roll tortilla and secure with paper towel.
Microwave on high 20 to 30 seconds.
* Other additions might include 1 tablespoon each of chopped
ripe olive, green onions, sour cream, or quacamole.
